Triple-Dog-Dare you!

So, this blog post is inspired by that last gem on my list… A Christmas Story. I know this is a favorite of many and I always look forward to the TBS marathon every Christmas Eve. So you can see why I almost peed my pants when an Etsy customer bought this custom card from me:

Are you peeing in your pants, too? Yah, I thought so! I asked her how she managed to get this amazing shot and this was her reply…

"I'm so glad that you enjoy the photo. We had a pretty ambitious goal. All it took was some custom head gear, a lot of cajoling, peanut butter, and about 100 photos. Wally and Monty were posed separately and then we had a friend paste the photos together."

How great is that? I just love it so much!

Hearty Carrot Cranberry Muffins

I've been craving carrot muffins recently. No idea why. I'm not a huge carrot person. I try to eat them every so often, but BLECH. I actually hate them, raw or cooked. I'll eat them if they are mixed in with other stuff, but mainly I don't eat them. So I went on Pinterest in search of a good carrot muffin for breakfast today. I found this great recipe from Two Tarts, but I modified it a little bit, so here's my version:

Hearty Carrot Cranberry Muffins
3/4 cup white whole wheat flour
2/3 cup dark brown sugar
2 tsp ground pumpkin pie spice
1 tsp baking powder
1/2 tsp baking soda
Pinch kosher salt
2 eggs
1/3 cup applesauce
1 tsp vanilla extract
2 cups (ish) of grated carrots (3-4 medium carrots)
3 tbsp flax meal
1 cup cranberries
nuts (optional) - I didn't add any, but I know how you people like your nuts!

Preheat oven to 350
Combine dry ingredients in a large bowl. Whisk oil, eggs, and vanilla together in a medium bowl, then add to dry mixture. Stir until just combined, then add carrots and cranberries & stir until incorporated.

Divide batter evenly into 12 muffin cups and bake at 350 for 28-30 minutes.
(I doubled the recipe because it just isn't worth my time and effort for only 12 muffins!)

These are so yummy! They absolutely accomplished what my body was craving! They don't have a strong carrot flavor, the flax makes them a little hearty, the cranberries add some tartness, the applesauce, brown (not white) sugar and whole wheat flour make them healthier than your average morning muffin, and they are EASY! (I will say, that my right arm is going to be uber sore tomorrow from grating the carrots… pathetic, I know.) The hubs wasn't a fan, but he's kinda crazy anyway! Amelie loved them (and I might have eaten 3 right out of the oven).

I made this for my friend Maggie's bf. She mentioned that they were going to be doing a RAOK (Random Acts of Kindness) day soon so I offered to make a more "masculine" RAOK card so her bf wasn't handing out cutesy little cards with owls on them. Potty Progress & Free Printable!

We have made it to that point in Amelie's life where we spend most of our time in the bathroom. Reading books, watching shows on Netflix, playing games on my phone, singing songs, talking about life, etc. "How much time could you possibly spend in the bathroom on one given day?" you might ask. Well, I'll tell you. Pretty much all day Wednesday until she FINALLY did her deed at 3pm, and then again yesterday at 5:30pm. She's got #1 down like no one's business, but #2 has been a whole different beast for her. My husband and I take turns keeping her company and patiently (sometimes not so much on my part) cheering her on.

Yesterday when she was down for her nap, I made a little something for her. I was thinking if she's a visual learner like her daddy and I are, A Potty Progress Chart was a necessity. I've been doing some research and regardless of the m&m rewards she gets when she goes (1 for pee pee and 2 for poo poo), she's still having a little trouble going big potty. So, now we have a new chart and lots of stickers!

When she woke up from her nap, she was crying from her bed saying her hiney hurt so I ran her to the potty to go, but she still wouldn't go. I tried lots of tricks that I kept reading about online like, giving her privacy, reading books, and even telling her that her poop will feed the fish in the ocean. ha! But when I showed her the chart I made, she lit up and I explained to her that she will get 1 sticker for pee pee, 2 for poo poo and when she fills the chart up all the way, we will take her to the store to pick out a new toy. OH BOY! What a difference.

Today she went big potty at 1pm without any assistance at all and she currently has 10 stickers on her chart! She loves picking out the sticker and finding a square to put it on. It helps her and I both see the progress she's making and she's going to get that toy in no time now, I'm sure of it!

New Stuff!

Holy monsoon today! The entire state of FL looks like this:

Yikes. Glad we didn't have any plans today! I sat my hiney on the couch all day with my compy and let the creative juices flow.(we might have ordered pizza, too…)

"What was the result?" you ask.

Right now.

I have sung "you are my sunshine" to Amelie pretty much every day since she was born. My mom sang it to me, my sister sings it to her children and it just strikes a chord in my heart.

This one is probably my new favorite in the shop. I was truly inspired by this quote I saw a couple weeks ago (source unknown). I believe God gives us challenges and struggles in life to make us stronger and to use those experiences to share our story with others who might be going through tough times. I have shared my "mess" with many friends and I love that God uses my story to possibly comfort others in a tough season in their life. I might just print this one up and hang it on my wall (when I get a wall to call my own, that is!).

So, I have these two new posters up in the shop today  :)

I will probably make stationary cards out of both of these and have those up soon as well.

Chapter & Verse

Check out this fun job I've been working on for a client this week… Chapter & Verse. It's for a church's women's book club. So simple and elegant :)

My apologies for being MIA lately. Life has taken ahold of my well, life. Did that even make sense? That just shows you how blah my brain has been lately. We are in the midst of a decision making season for our family and it's taking a toll on me! I can't wait to have my own space where I can create and get my etsy shop back up and running again. It's my outlet and I NEED it to stay sane!

Once I get going again, I'm planning on having another giveaway and I can't wait! What would you like to see in the giveaway gift? Suggestions anyone?

Blog Facelift

Phew! After many, many hours of trial and error, html coding problem solving, and a pair of blurry, tired eyes, I'm so happy this "facelift" is complete! (For now, at least… I like change, can you tell?!) My look is constantly changing because I get a little tired of looking at the same thing, so usually at least once a year I get the itch to change things up. Usually it's just the header and maybe a few colors here and there, but this time… this time I got a little carried away inspired!

I decided to customize some things, like the social media links on the sidebar in the cute little flags. I also added new tabs at the top that link to my portfolio (ALL NEW as well!) and an about me and contact page and such. I feel so accomplished right now! (even though I'm falling asleep while typing this) I'm hoping to add more tabs (recipes, diy's, freebies, etc) soon so if you like any features on other blogs that you read or stumble upon, let me know what it is and I will consider adding it to my site. I'm here to please :)

My "real" job

I figured I would start sharing what I do for my "real" job. I'm so blessed to be able to do my hobby to make a living. This project is for one of my clients, Christ Fellowship Adult Ministry. They asked me to design a paint can label for their Life Groups and I'm pretty happy about the outcome. Hoping this helps their Life Groups flourish!

Easter Eggcellence!

It's Good Friday, y'all!

I experienced my first Maundy Thursday service last night (I didn't grow up going to them) and it was an amazing reminder of what Jesus Christ did for US. We tend to get caught up in our daily grind and forget about the bigger picture called "LIFE", "SALVATION", and "ETERNITY". I was choking back the tears the entire time just meditating on how it might have felt for Jesus, in terrible pain, when he uttered the words, "it is finished." It's so much to take in and comprehend. I'm so thankful our freedom allows us to worship however we feel fit and that we are able to celebrate Easter and Jesus' Resurrection!

Ok, now to the less serious stuff :)

I've been pinning away on pinterest and I've found some pretty exciting ways to decorate eggs. Man, people never cease to amaze me in there inventive, creative ways of making traditional things new and fresh! If you are planning on decorating eggs this weekend, consider one of these cool alternatives to dye and vinegar…

I actually might try this one if I can find some cheap silk… look how amazing these are!

Did you just say "shaving cream"? (Note: I wouldn't recommend consuming these if you are using hard boiled eggs)

Love Day countdown: 1 day left!

Bummer. I totally forgot to blog for my countdown yesterday. You might think it was because I was enjoying my Sunday with my family, but sadly, no. I was cranking out a huge book layout for a client. Nonetheless, I am here, today, for my countdown.

Countdown to "Love Day": 4 days

Only 4 days left until that day where people go crazy over hearts, pink and red stuff, tacky chocolates, big balloons and And where (some) women find themselves in tears at the end of the day because they didn't get a dozen red roses delivered to them at the office while all the other women got lavish gifts and/or telegrams. (Do telegrams even exist anymore? I don't even know, I'm just on my soapbox now!) Ok, I might sound a little bitter, but really, I'm not at all. I just don't care for Valentine's Day much. At least my husband and I agree on this. I asked him if we could forgo gifts this year and I think he's on board! (I can't resist giving some little trinkets to my adorable 2 year old, though)

You might ask, "Katie, if you don't like Valentine's Day, then why are you doing a ridiculous countdown with lots of cute ideas for that day you don't particularly care for?" Well, I have a good answer for you, my friendly blog reader… it gives me a great reason to 1) blog (finally… yay!), 2) get inspired and inspire others who like this "holiday", 3) bake cute and yummy things, 4) give cute little gifts, 5) tell others how much I love them, and 6) craft!

So, there you have it and here is some more "love" inspiration for you…

Monster Smoothie

I've been meaning to write about this for a while now, but the holidays took ahold of me. Between that, business with work and just needing a mental break, I have left a huge gap in my blog. I'm hoping to jumpstart my inspiration again and get going on my posts once more.

Speaking of jumpstarts… this recipe is sure to do it for you if you need one! And might I add, it's SUPER YUMMY and SUPER HEALTHY, which makes it all the better :)

I have been making these almost daily for either a lunch or a snack and Amelie is a huge fan as well. She'll drink just as much as me and it's a great way to get some extra nutrition in her.

Without further adieu… here's the recipe for my "Monster Smoothie" (adapted from some others out there)!

What you will need:

• handful of berries - strawberries, blueberries, rasberries or blackberries (or all of the above)
• 2 or 3 heaping spoonfuls of Fat Free French Vanilla Stoneyfield farms organic yogurt (or you can use greek or any other organic yogurt of choice)
• 1/2 banana
• 1/2 cup Skim organic milk (add or take away depending on what consistency you like)
• large handful of fresh baby spinach, raw (this is what puts the "monster" in "monster smoothie")

• 1/2 scoop flavored protein powder (my fave is chocolate or chocolate pb)
• handful of pineapple
• 1/2 avocado…  mmm!
• ice… if you like it extra cold like me (if i'm using frozen berries, i don't add ice)
• 1/2 - 1 cup of cold coffee (if you need that extra boost)

Put all your ingredients in a blender or magic bullet and blend away. Pour into your favorite sipping apparatus and sip away! This is such a great thing to have after a workout or as a meal replacement. It's so filling and so healthy! 

And if you're a little scared of the spinach, don't knock it til you try it. You can't even taste it! Believe me, if you could, my toddler probably wouldn't be ravenous over them. Enjoy :)
