Lime Poppy Seed Dressing

I feel like I'm always looking for a new way to make the same ole, same old salad a little snazzier. I came across this salad dressing yesterday, tried it out last night and I have to say it's tasty! I used raw, unfiltered apple cider vinegar (woah, talk about ZING!) and squeezed lime juice from fresh limes and it was zesty, alright! YUM!! Honestly, I don't know what the poppyseeds do for it, so if you don't want to make an extra trip to the store, I would make it without.

Lime Poppy Seed Dressing

1/2 cup lime juice
1/4 cup sugar
1/3 cup olive oil
1 tbsp apple cider vinegar
1 tsp dijon mustard
1/2 tsp salt
1 tbsp poppyseeds


Shake, shake, shake and… Voila! You have dressing!

My salad consisted of:
- mixed baby greens and baby spinach
- strawberries (and blueberries if I would have had some on hand)
- feta cheese (I think goat would have been better)
- grilled chicken
- tomatoes
- walnuts (pecans would work, too)
- dried cranberries
