I've been daydreaming about experimenting with s'mores cupcakes for a while now. S'MORES and CUPCAKES: 2 of my favorite things!
I would say they were a success :)
As much as I HATE to use box cake mixes, I had to because, well, I'm a workin' gal with a 15 month old (doesn't that say it all?!) and it was last minute for a birthday party, so I kinda had to throw these together on a whim. Luckily they were easy, didn't require many ingredients and, well, I think I just got lucky that day cause I didn't have any issues.
I searched high and low for the perfect marshmallow frosting recipe and FINALLY found the perfect one HERE… it made me giddy.
S'mores Cupcakes (makes 24)
Cake:
1 box chocolate fudge cake mix
1 box instant chocolate pudding (optional)
eggs, oil, water - whatever the box calls for
Mix everything together (just throw the dry pudding mix in with all the ingredients - it makes the cake so moist and yummy!) and cook according to box.
Marshmallow Frosting:
8 oz. of marshmallow fluff3/4 c. softened butter
1/2 c. powdered sugar
1/2 tsp vanilla
Mix together in mixer. (I would have liked to have a little more icing, so if you want more than what you see on my cupcakes, I would double it)
I piped the frosting on and then crushed some graham crackers to sprinkle on top. Easy, cheesy!
I still want to keep experimenting with these… the possibilities are endless! I hope you make them and I hope you enjoy 'em as much as I did :)

What are smores? We don't have them in Europe!

ReplyDeleteS'mores are normally made over a campfire or some sort of open flame, but lots of people (including me) just heat them in the microwave for about 10 seconds if you don't have a fire available. YUM! :)
